Cauliflower couscous salad with cranberries and lamb ham

Ingredients

How to prepare it

  1. Finely mince the cauliflower. Season to taste with olive oil, pepper, salt and green herbs.
  2. Place some lettuce on a plate, divide the ham over the top and scoop balls of couscous onto the lettuce. Divide the sundried tomatoes, cranberries, raisins and apple over the ham and couscous. Spoon the dressing over the top.
