Half a beaten egg (use the other half to coat the rolls)
½ a sachet of yeast
Filling
100 g cream cheese
100 g grated mozzarella
100 g ricotta
45 g kale, cooked and wrung out to remove moisture
Salt and ground black pepper to taste
Topping
4 eggs
Za’atar spice mix
How to prepare it
Mix the above ingredients to make a bread dough. Add more water if necessary. The dough should not be too sticky but not too dry either.
Knead the dough for 10 minutes. Fold the dough, place it in a greased bowl and cover with a moist tea towelin a warm spot for about 45 minutes. Meanwhile,xix all the ingredients for the filling together in a bowl and set aside.
Preheat the oven to 190 degrees Celsius.
Turn the dough out onto a flour-covered work surface.
Shape into 4 rolls in the shape of a diamond ◊◊◊◊. The outside edges should be raised slightly.
Place the rolls on a sheet of parchment paper so you can transfer them to a baking tray.
Fill the rolls with the cheese filling. Break an egg on top of the filling and bake the rolls.
Coat the edges with the leftover beaten egg. Bake them for 15 minutes.
