Bolani (Afghan spring onion-potato snack )

How to prepare it

  1. Make a yeast starter in a separate small bowl. With 100 ml lukewarm water and 2 tablespoons of flour. Stir together and set aside for 10 minutes until it starts bubbling.
  2. Add the starter to the rest of the flour. Add the rest of the water and salt.
  3. Mix together and knead for 5 minutes.
  4. Cover the dough and let it rise for about 1 hour.
  5. Sauté the filling ingredients in the olive oil. Add the soft-boiled potato pieces and mash into one layer. Allow the filling to cool.
  6. First make 4 balls with the risen dough. Dust your countertop with flour.
  7. Press the dough balls flat into a kind of pizza base and put the filling over the dough. Fold it over into a crescent moon shape and cook it immediately.
  8. Place the filled dough pockets in a dry skillet without oil, press on the dough with a spatula until crispy and browned on both sides.
  9. Serve with Greek or Turkish yoghurt blended with some salt and freshly chopped mint.
