- 1 wholemeal tortilla
- Half a ripe avocado
- 1 large egg
- 1 tbsp pistachios
- Dash of lemon juice
- 5 gr olive oil
- Pinch of pepper and salt
How to prepare it
- Cut the avocado in half and remove the flesh from one half.
- Mash the avocado with a fork and season with pepper and salt.
- Chop the pistachios.
- Heat a skillet with the oil and fry the egg.
- Top the tortilla with the avocado mixture.
- Put the fried egg and the pistachios on the tortilla.
