Ingredients
1 wholemeal tortilla
Half a ripe avocado
1 large egg
1 tbsp pistachios
Dash of lemon juice
5 gr olive oil
Pinch of pepper and salt
How to prepare it
Cut the avocado in half and remove the flesh from one half.
Mash the avocado with a fork and season with pepper and salt.
Chop the pistachios.
Heat a skillet with the oil and fry the egg.
Top the tortilla with the avocado mixture.
Put the fried egg and the pistachios on the tortilla.
