How to prepare it

  1. Blend the nuts, garlic, onion, greater galangal and coriander with a mortar or food processor until it forms an herb paste.
  2. Heat a pan with a dash of oil and cook the herb paste briefly.
  3. Add the herb paste, herbs, coconut, spring onions, and celery to the beaten eggs. Add the sweetcorn kernels. Season with salt.
  4. Heat oil in another pan. Scoop large tablespoons of batter into the pan and fry the fritters until browned and crispy. 
  5. Serve the fritter with the tomato salsa.
