1 orange organic pumpkin or butternut squash of approx. 400 gr
1 to 2 red onions of approx. 200 gr
160 gr fresh soft goat cheese
2 sprigs of fresh thyme
1 tbs honey
200 gr spelt flour
100 gr unsalted butter
2-4 tbs icy cold water
How to prepare it
Thinly slice the butter and place these slices in the fridge for 10 minutes, so the butter is cooled. Sieve the flour into a bowl. Quickly rub the butter through the flour with your fingers until it looks like coarse grains of sand. Add the cold water and mix into the flour with a fork until a fluffy dough is formed.
Dust a clean cutting board with a teaspoon of sieved flour. Place the dough on the work surface and carefully knead it into a firm ball. When the dough feels flexible, without being sticky, you can roll it out immediately. If not, wrap the dough in baking paper and place in in the fridge for fifteen minutes.
Cut a piece of baking paper large enough to cover both the bottom and the edges of the cake pan. Then roll out the dough with a rolling pin to about the same size. Place the dough into the cake pan and prick it, mainly along the edges of the bottom, with a fork. Now make the pie filling.
Preheat the oven to 200 °C. Cover a baking tray with baking paper.
Wash the pumpkin, cut it in half, remove the seeds with a spoon and then cut it in slices of around one centimetre thick. Sprinkle the pumpkin with a pinch of fine sea salt and black pepper and grill the slices in the oven for approx. 15 minutes.
Peel the red onion, cut it in half and then slice it thinly. Cook the onion with a bit of olive oil, the fresh thyme and the honey on low heat for approx. 15 minutes. Stir the onions now and then until they have caramelised. Remove the sprigs of thyme.
Preheat the oven to 170 °C. Bake the pie without filling for 10 minutes. Then take it out of the oven.
First top the pie dough with fresh goat cheese, followed by the caramelised onions. Then place the grilled pumpkin on top of the other ingredients. Bake the pie for another 15-20 minutes.
The pie is done when the edges of the pie dough are lightly browned.
Preparation tips This recipe can be varied as follows. Use 4 layers puff pastry instead of homemade dough. Replace caramelised onion with fresh spring onions or stir fried leeks. Goat cheese is great with pumpkin, but Parmesan cheese is also very delicious.
Serving tip Serve the pumpkin pie as small appetiser or as homemade snack. It’s also great with a bowl of hot soup.
